Looking very good!
I reckon the cubby box is the right shout mate. Front facing seats and the cubby box looks like it’s meant to be!Tried the fridge in place of the cubby box, it doesnt fit about 20mm too large! You can kind of wedge it in but needs some more thought to work...
So back in the boot for now, maybe revisit the slide out the door fridge or work out another way to fit in the middle!

New rear crossmember with extensions or quarter chassis? Or just cut out and weld?
Disclaimer - not telling you how suck eggs!!!
Where you have the rot and towards the front where the crossmember and rear spring hangers are, there are crush tubes (for the shock mounts) and also there’s double skins either side of the rail that are like inner fish plates. Bare that in mind anywhere you’re chopping there mate.
Once you got it cleaned out, dynax and the long lance help!
Those skins make welding in that area a bit trickier - they are basically curved 2mm angle iron working as a brace. You’ll soon see them!Cheers dude! Much appreciated. Not done any chassis welding before bar some very minor repairs. So any help and tips is much appreciated!!
