Donkeys year ago I did three jobs at the same time to earn enough dosh to go on a rather long holiday with a girlfriend and her family. Work, sleep, eat when you can. Not to be recommended! I done that for years no chance of me doing that now.
Why not try a courgette, sliced and maybe chopped a little more then a shallot and a clove of garlic, crushed, some Herbes de Provence or Italian herbs all sautéd together in either oil or a mix of oil and butter, it doesn't have to be olive oil, sunflower oil is actoooly less harsh flavour wise, THEN add your mushrooms. I have this, or a variation of it, every Saturday night with my steak.Eye like mushrooms so eye is adding them to me choppin list. Only the baby ones yet gettid wiv stake when yer in an o'tel. The closed type. Fink they is called button mushrooms.

You could also add a little red wine to deglaze the pan or a bit of brandy.
