the Ah rating is a measure of battery capacity - theoretically a 72Ah battery can supply 72A for 1hr, or 36A for 2hr, or 18A for 4hr and so on.
The amount of "whizz" is dependent on the battery charge condition and the condition of the starter motor and connections in between.
yes, you can fit a transit battery - it will be fine.
it's best to fit the biggest Ah battery that you can afford and that will physically fit into your battery box.
