To be fair to landrover the new defender has to sell in greater numbers, and have wider appeal than the old one. The old defender never made them much money compared to the discovery and freelander.
I like it, but I think they should do a very basic model. The days of buying any vehicle that you can repair in a field with minimal tools are long gone, the last defender that you could do this with was the 300tdi
I tackled my rebuild in sections, and as a result prepped for each section. It's a lot to think about in one hit. Also once you have finished using a specialist bit of kit you can flog it to buy something else you may need.

On my defender 300 tdi i keep a close eye on coolant level, and regularly have to top it up.
I tend to treat my defender as a machine that needs regular maintenance, I wouldn't dare just give it a yearly service.
