General rule of thumb for me, if I can hold the top hose, between thermostat housing and radiator, then all is ok, if I can't hold it, then it's overheating, but everyone has different tolerances
A reliable digital laser temp gun is a good idea, if you know the thermostat temp, then the thermostat housing should be a similar temp, if it is, just look at the temp gauge and that is the running temp, put a small mark on the gauge and if it goes way over that then you might have a blockage or air lock
