I have a disco 300 3dr. I'd like to do a 3" body lift and fit 2" spring lift spacers. What mods will i need to do? i.e. extend brake lines.

Definately extended flexi brake hoses.

Why?
A 3" body lift and 2" spring spacers smacks to me of an unstable vehicle that will just bounce about and only make you look like a #### what knows nothing on the lanes or Pay 'n Play sites.
No point going that high without lots of other mods, IMHO ... and even then it needs thinking about and way better planning and knowledge to make it work properly, successfully and safely ...

because i want more body clearance for deep water etc. Also want to fit reasonably big tyres.

then yr trying to do it wrong all you will do is put strain on standard parts that arnt designed to do what u want to do with them..
I have plus 5" shocks, lift springs, dislocation cones,shock droppers,body lift and 37" tyres ,ext hoses and theres still loads I need to do

no..if u want to lift it save up and do it properly it will save u money in the long run

Ok in that case what exactly needs to be changed to keep it reliable but still a good tool.

ive got a 5 inch lift of mine done all the right bits and drives ok too ! if you just want body clearance fit a 2 inch body lift to start with

Have a search, it's been asked and explained a million times, and as ever it depends .. budget, baseline to start from, where you want to be, what driving you do, what mechanical ability you have, what electrical ability you have.
Or just throw money and a garage at it ...

depending on the amount of body lift, you will need to extend gear leavers and hand brake.

also think about how often you go into car parks where there is a height restriction......... you can just about get away with a 2" lift and still fit in most car parks.
But to make it as you put it "reliable" for off road use. just add some mud terrains snorkel jate rings and diff guards and you can pootle on pretty much anything.... oh and some strops and shackles all relatively inexpensive
