Blocked air filter, blocked air vent (see link), lack of fresh air flowing through car, rear window/boot leaking, fish tank full of water...
I get the same problem with condensation. Had the same with a previous car. I bought a dehumidifier which I put in mine for a few hours a few times a year. Done it yesterday and it’s dry inside now.

Water does not appear out of nowhere. There has to be a source either inside or getting inside the car somewhere.

I think it's from the dampness of the winter air, unless there's a water leak.
This is why it is important to have the aircon working correctly, it reduces the moisture in the air coming into the car.

I truly do not believe it to be a case of high humidity, or we'd all suffer from it in this weather.
In my experience, over years of car owning, they'll be a source somewhere. Sometimes a pinhole leak in a heater core/pipe, or as someone upthread has mentioned, water in the rear compartment. Maybe also a wet carpet. Check under all your mats etc for any water.
As an example, you will get internal (on glass condensation) if you get into your car from the rain, with a wet coat etc.....

the worst offender is people who remove the door cards and dont reseal the plasticy selophane behind after looking at locks and windows,or door seals are a normal culprit on most cars.

I think mines come from wet shoes on the rubber mats. All windows mist up if left all day at work, but it doesn't do it when it's left in the garage. Only during winter periods so it’s effected by the cold. No leaks in or out. Cars which don't do many miles don't get the natural air flow through them.

The AC should be capable of clearing the condensation from the windscreen in minutes - especially if you set the system to re-circ, with fan and heat set to full, and the air flow set to screen.
Assuming your pollen / cabin filter is not full of dead wasps and damp leaves then your AC need checked and topped up if necessary.

My (now fixed) heated windscreen does it quite adequately and bloody quick too !!!

Oops - sorry about that Crombie - I was forgetting you have a 99 model don't you?
Depending on the trim level you might not have AC.
It might of course just be that it never stops raining if you go further North than Inversneckie.
Not that it's any drier down here in the Peoples' Republic of Aberdeenshire.
