With the engine out how in gods name am I removing this ?

Also how on earth am I torquing it up or do I need to wait until its back in ?

I cant see any way to lock the engine cleanly and reliably...

Everything I have read talks about leaving it in gear and cranking (not an option), or wedging it against the chassis which I don't follow at all to stop rotation and keeping in mind its sat on axle stands doesnt help.

Try the following

He sells option of just the head to save postage so if you don't have a chassis you just weld your own extra-long handle on there so it touches the floor at a useful distance.

The true bodgers way is to get a decent breaker bar and socket fitted to the crank bolt, with the end of the bar approx 12 inches above the top of the chassis rail, then and this is the dicky bit, crank the starter (stop solenoid wire removed!) it will take more than one go, you may need someone slightly deranged to hold the bar and socket in place whilst the engine is cranked.

You can buy a tool that uses a hammer to crack the bolt off.
Ebay USA but I am sure some research will find a UK supplier.
