Usually when you save a new contact it should give you the choice of saving them on the phone or on the SIM. Maybe you have a default setting somewhere on the phone which will automatically save it to one or the other location, if so it should...

If your phone is backed up to the cloud the process is easy because you synchronise using google. Or, you can use Myphone Explorer (free software) to create a full back up and then use the same software on the new phone to restore from your PC...
