I would rather forget the really deep water and stick with the V8, love it! I had my first off road experience last weekend at Salisbury plain and limited myself to the shallow water because the RR was standard apart from a set of insa turbo tyres. Great fun!
Even a standard Range Rover can do moderate water. My classic hasn't been lifted. The modifications I have made are quite limited, I have put electric fans on instead of the viscous fan, the dizzy cap is sealed with silicon (but I need to make a vent system for it really), I have a home made snorkel, I extended the axle, gearbox and transfer box breathers and sealed them into the snorkel, I made a plastic splash guard for the dizzy and the coil has a plastic bag wrapped round it. I have a set of Insa Turbo Dakars, 235/70/16's.
I haven't made any modifications to water proof the ECU's which was a bit of a risk but the door seals held up pretty well. So really you'd be surprised how good a standard motor is. But always carry a BIG can of WD40 or similar
