So, apart from going across fields for car boot sales, never been off road on 4 wheels, any where near Hertfordshire where I can get stuck?!!!!

I guess there should be a rule book for off-roading.
1) let people know where you're going and when you will be back.
2) be aware of the mechanical preparedness of your vehicle. including maps
3) carry common necessary spare parts...belts, etc.
4) carry extra fluids.
5) carry recovery gear... winch, high-lift jack, tow straps, chains, etc.
6) carry enough survival gear to last till you can be rescued/recovered
blankets, water, candles, food.
7) whenever possible..go with a buddy.
8) probably the most important, know your own abilities and limmitations.... Ask if you don't know
9) respect others and the trails.
10) Help others.

Plenty of places in Britain where there is no phone service too.
The main difference is that there are not that many places in Britain where it is legal to drive off road, and they are becoming less over time.

Luckily, there are literally hundreds of roads to drive on a few minutes from town. You can drive 500km up the North Road till it stops.

Sadly, that is just not the case in the UK. Over large areas of the country, there is nowhere you can legally drive more than a few miles off tarmac.
It used to be a bit better before the Nerca Act made it illegal to use motorised vehicle in many of the old byways.
