ok, so I have patched where required on the floors, removed all rust and started to paint to floors (will add photos when i have finished).
I still have a leak, both passenger and drivers side (pass anger worst). although i will continue to try and solve this i am pretty sure landy's always have water in them. so my question is:
do i put back in the original sound deadening foam stuff?
what does everyone else use?

reason being the foam just holds water and will fill up fast and then speed up rust, is it really that noisy without it?

Do not put that sound proofing back in! It soaks up the water like a sponge and will rot your Landy from the inside out... Get some decent Stable Matting and cut to size. It does not hold water and will also deaden the sound... I used the Landy mats as a template and just cut round them for a good fit.
