How do I get them loose so the bloke at the garage can do the tracking?

if on the vehicle some penetrating fluid and 2 hammers one used as an anvil ,hammer round all the part of the tube thread extends in to if off place rod on a vice etc and do the same ,eventually it will unscrew by hand,never fails

I'm getting the hang of this because I said that to the git in the garage and the lazy sod said I'd need to heat it with gas, not allowed to use gas here, he said. I asked if I could have a go and he just mugged me off. It isn't disconnected it's still on so I'll try your anvil hammer advice.

Well, you don't want it getting too hot, because you'll boil all the grease out of the ball joints and melt their little rubber concertinas.
Surely your mechanic would have had a couple of hammers lying around?
I've done this in the past by taking the rod off and tapping the tube all the way around its circumference using the kerbstone as an anvil. It's the vibration that breaks the bond between the two components.

Once you have them apart check the thread's both on the joints and in the track rod.Have come across some that were to crusty to bother with.

I have found most people to be dicks when it comes to Defender tracking. Few places near me refuse any Defender, one place tried and said 'it just can't be done'. Finally found a Government run MOT station that did it spot it for £30, probably an actually mechanic....
