Worth noting that a different tyre, especially a mud or wider will feel different anyway....but no reason they shouldn't be balanced.

That sounds more like tyre pressures.
Wheel balance (or lack of) causes the steering wheel to shake

Nothing to do with the tyres or their balance then ...
Steering column UJ's and clamps might need tweaking up, and all bushes/bearings/connectors in the steering system to solve this ..

I have large mts on mine but I don't have issues until I get to about 110 mph or so!

You will find its the opposite a lot of the time, as the tyres are so heavy being out of balance by 50 or so grams really isn't noticable, it's such a small percentage of the total tyre weight. Also a lot of machines won't physically take a big tyre, the guards may not come down or it's just too heavy for the machine so depends on what equipment the OP's fitter had access to...
I was fitting the tyres for Extreme4x4 for a while and was instructed not to balance 31" and larger as it was not needed, if the was any vibration they would use beads so this no weights to lose when off roading

used to work for a balance weight manufacturer, the worst thing was designing weights for big off road tyres - they get ripped off by the mud, in the end we started recommending the use of balance powder/beads or even water, that ones a last resort.
