Just out if interest do either of you know anything about winter tyres for landrover defenders? It's just that was the question I started out with.

IMHO winter tyres apply mainly to cars/light vans/softroaders that would usually have a tyre fitted with good dry/wet road capabilities yet because of their lack of tread pattern due to large circumferential grooving are practically useless in snow.
Winter tyres have a more aggressive tread and with that comes a greater rolling resistance and reduced fuel economy, they are generally of a lower speed rating to a standard tyre and will run hotter with accelerated wear in certain driving conditions.
Personally I would advise buying a quality modern all terrain tyre which will have excellent all weather capability built into its design such as the General Grabber AT which I run on my Disco2, can't fault them!
