Hi folks, I need to remove injector number 1, located at left end of fuel rail looking into engine (next to maf sensor).

Do I need to remove the entire manifold to get to the high pressure fuel pipes which connect to side of injector? The Haynes manual shows image with the steel fuel pipe already removed.

If so is it straight forward to unbolt the steel fuel pipes that wind their way around the manifold into the injector?

Any tips appreciated, ideally step by step procedure.

Remove the inlet manifold. It's very easy to do, taking 10 minutes or so. You only need to remove the pipes necessary to remove the one injector you plan on changing. However I'd be cautious on replacing one injector. They should be fitted in matching sets of 4.
Replacement of a single injector has been reported to cause all sorts of strange running issues.
 
Make sure the engine is nice and hot, it will help with the removal, also be careful how you prise the injector out as you can damage the cam cover, few photo's below for you.
I remove the manifold it gives you more access to the fuel lines, also should you need to remove the other injectors for cleaning maybe ?

I always put a metal flat bar on top of the can cover this runs the full length, I then use this to prise off, remove the wiring to the injector, remove the hose, loosen the two 8mm nut either side of the injector so they are flush with the top, using a pry bar prise out the injector slowly, once it is free remove the nuts, then slowly remove the injector be careful as there can be lots debris round the injector you do not want that falling into the injector hole, maybe use a soft brush before removal and or an hoover to remove the debris, of air line to blow it from around the injector, you can change the injectors as singles but make sure they have the same code on the top.

I changed it over today, left engine hot, old one came out easy, unfortunately when I removed the two torex bolts that raise the injector clamp, they both broke in the wrench :-(

I replaced the injector but since the now broken torex bolts were already raised slightly the injector won't sit back to its original position - will this cause an issue?

To top off when bolting the manifold back on one of the m6 bolts fell down between pipes under the engine. I'll buy a new bolt in motor factors but concerned about the torex broken screws...is it safe to start?

I removed the two torex bolts that raise the injector clamp, they both broke in the wrench

You should have removed the 8mm nut not the torx thread ? of are you saying they sheared off when you tried to undo them, either way I would not stat the car as the pressure would shoot the injector out like a bullet

Yes I should have only taken off the bolt but I tried undoing the thread upstands also. I need to remove these bolts now with easy out or something similar and then replace and return injector to rght position snug in the engine manifold
