Dont worry about the injector readings too much, just remember they take into account the physical condition of the engine aswell as manufacturing tolerances in the EUI's themselves. The ecu just alters the injector duration to try to get each cylinder to make the same amount of progress on each firing stroke.
What does the airflow meter read at 3000rpm with the engine hot - running free ? It should be approx 330Kg/Hr - any less and the engine will not make good power.

How long have you had the car ?. Two Years
How long has it not been running properly ?. One year
Does it smoke ?. Not now(Removed EGR - Replaced Hoses Removed and cleaned Inlet manifold and Intercooler)
Is it ok on fuel ?. It has been very thirsty but seems better since yesterday
Does it make any odd engine noises ?. Sounds like a tractor(but only like you would expect
Is it manual or auto ?. Auto

If he,s struggling for air, will this be causing smoking ?.

Erm - probably a looong way off the mark, but when you say it's struggling up hills or when towing a box trailer and all you get is more noise but not more power - Do you mean that the engine revs higher but the road speed stays the same?

If so then your clutch is slipping, it would not be your engine that is sick, it would be your clutch. Either it's worn, oil contaminated or needs adjusted (I'm not sure if there is any user adjustment available on your car.)
