Hi,
Currently working on turning my Freelander 2 in to a fold away camper (so it can still be used as a 5 seater car on trips).
Installing a pop up induction hob and sink where the spare wheel was this will also house the auxillary battery diesel heater and inverter( charged from car alternator). The TVs and usb chargers and touch lights have all been placed on the boot side walls with volt Meter to keep an eye on the power. Currently only half way through the conversation so we will see how it goes lol wish I could do videos about the camera is not my bag. Also ignore my mess the garage is freezing so doing it in my living room lol

Have you thought about using a roof tent? You could still put the kitchen 'downstairs' and have more living room 'upstairs'.
 
Do you have any pictures of the end result? Looks kinda neat but I am considering something similar for my Freelander 1 so would be good inspiration!
