Thanks everyone, I have added a couple of spacer but still isn’t right, I will try the bolts for the roof now

To get the door in, you would be best putting the shims door side, by doing it pillar side you are moving the whole lot further out, shimming it in on the door side will push it in.

It might be the hinges lift one end of door if there is play that's your problem
