I was thinking of just doing sills, rear corners and wing tops, next question, is it worth paying for 3mm or will 2mm suffice? I won't be walking on the wings!

Not a fan myself but my wingtops are done because I do walk on them.
If it's just for looks it's up to you, can't stand 'em shiney myself. I primed mine dark grey with the intention of painting them in Nato Green to match the rest but looks reasonable as it is

my wingtops are chequered, BECAUSE somone had walked on them, they are nice and denty under the nice chequer !
