BRAKE PEDAL KICK-BACK PROBLEMS!

Hi everyone,
I have a 1995 Range Rover P38 with brake issues. The cars been running and braking fine, up until the rear brake pads needed changing. One of the rear pads lost the 'pad' and the piston pushed out the remaining metal plate. Car went into the garage for new discs and pads all round. The calliper that had pushed the plate out needed to be removed so the piston could be pushed back in.
This was done, new discs and pads fitted and the system bled up.......
Now here's the problem- when I now put my foot lightly on the brake pedal, it 'kicks back up' and the car brakes violently! Once we've flopped back into our seats, the braking seems to revert back to 'normal braking'. But 30 yards later you can put your foot on the brake pedal again, and again pedal kicks up into your foot and were flying through the window again!
Prior to discs and pads, the braking system was perfect. We've checked for brakes binding, and car doesn't pull to one side.
