Speedo jumping around not uncommon with the electronic head. The sender is attached to the chassis and can be temperamental, if it dies you will loose speedo, cruise control and your EFI warning light will come on - the speed sensor tells the injection system that idle stabilisation is not required as the vehicle is moving. Swap it out for another one, easy job. Also check the speedo cable.

could this be related to the problem iv been having with it cutting out? It occasionaly cuts out when pulling up to a junction. and sometimes when i start, the revs jump around a bit on tickover, like i start and it revs up to 2000rpm, then drops down to <500.... its a bit odd

I would have said unlikely; the speed transducer input to the ECU as far as I know is there simply to switch off idle stabilisation. Also when the transducer drops out, the EFI warning light should come on. I have had a dodgey transducer, sometimes it would work and sometimes not; never had idle problems as a result but not having a speedo and cruise was a bit inconvenient to say the least.
