I have 265's and would go for 235's again next time. Purely because I get fed up with having to clean my side windows due to mud and spray getting thrown up em.

You pay your money and you make your choice. Remember though the wider you go the more problems they will cause:-
spraying crap up the sides
increasing turning circle
destroying wheel bearings
increasing fuel consumption

Land Rover fit 235's for a reason, if you do go wider do it for a good reason and be prepared for the potential issues.

the 265 tyres i've got seem to be wearing my wheel bearings quite quickly, adjusted them twice in not too long

Might be worth looking at your tyre mix , as this can cause directional instability, esp when swerving . BTW landrovers dont have to wander , its usually down to worn components etc .
