Start by pulling those stupid plastic covers off the enigne, they only hide problems. None of my vehicles have any covers on them. You'll soon find the problem by digging and not on here my mate🫵😜

The optimum operating temperature is 95C, as the late Wammers said, normal operation is between 85 & 95C. 105C is within the normal range but is rarely reached. The dash gauge stays at mid point from 85C to 105C.
from my experience with the viscous on the v8.. when it started to fail, the average running temp while driving clicked up a degree or 2. swapped the viscous and it dropped back down again
FWIW there's a couple of things that might be worth checking. Are you sure the dizzy pick up is working, is the air gap correct? If the pick up isn't working, the ignition amplifier won't switch. Setting the air gap for the reluctor is easy as is...
