Nice one, I’m a bit of a list man myself and would start documenting what’s been done , what need doing , what parts you have new and old to be fitted then label all those little seals and gaskets.
Then decide whether to keep tdi or di then I would start with the engine as easier with the access to it you have now , certainly remove the inlet manifold and turbo to clear out any birds nest inside , set tappets maybe head off check cylinders , new gasket.
Inspect and clean the fuel bits , lift pump , fuel filter , remove injectors but connect to IP and purge clean fuel through checking spray pattern.
Pump water through cooling circuit see if any crap comes out , fit new rad , plumb a temporary fuel supply and coolant
Oil and filter change , then give it a trial start. Should keep you going till weekend
