Most common carb needle in the day for a 1275 was a DZ, used by Austin, Riley, Morris etc for their standard 1275 motors with single inch and a half (38) carb BTW.

As per @tottot - I use a bungy chord stretched between the two doors to hold the bonnet up or if there is two of us, I remove it completely.
Send us a picture of the filter if you can... the original doesn't unscrew.
With regards to the noise, have the water pump replaced with the cambelt. If the noise is still there you can change the pas pump yourself at a later date if you are happy doing it.
