Welcome along. Pretty sure all parts are available, not had trouble finding stuff for my old girl. Google is your friend.
Use mine for work apart from when she has a strop and don't start, I find if you talk nice to her and let her play in the mud every now and then she will be good to you.

what sort of things apart from the usual rust and oil leaks etc should i look for when i go to see one

also what sort of mpg can you expect from a 2 1/4 diesel
 
MPG on my 2 1/4 diesel daily driver is 26/29 do a search on here someone recently posted an excellent guide on what to look for when buying. only a few parts like later steering/ignition locks are not easy to find. With a series or defender you will find a lot of pattern parts leave a bit to be desired for quality. Beware of parts in blue boxes!
 
Mines petrol and thirsty, not sure what the diesels do.
Someone will be along to tell you what to look for that will know better than me.
From what I've learnt rust is the issue, take a hammer and some old clothes and get under her and have a good poke round, there getting on a bit now so make sure it's a good look.
Not really any thing else, other than normal stuff to check, do expect plenty of rattles, squeaks and whines on road test.
 
you can get replacement body panels but they won't be new and will probably be bent or dented :)

Not normally worth replacing them anyway as they don't go rusty. Main bits to check are the bits that DO go rusty - chassis rails, outriggers under the bulkhead, rear cross member and the bulkhead corners below the windscreen. Lift the mats in the footwells and check for rust/holes in the steel part below the pedals.
