Hi

New to diesel engines, so, I want to Gunk and jet wash the engine and bay so I can check for any oil leaks that I may need to pay attension to.

Can I just spray the **** out of it? Or are there key areas I should avoid? Spray all the wiring with WD40 first? Keep the engine running?

Yes - spray wiring with WD40 first, keep the engine running (for many reasons) and try and keep water away from moving parts, as the jet can penetrate some bearing seals, the alt doesn't mind getting wet BUT there are 2 critical bearings in there, may as well not aim the jet right at it.
 
yes as above i dont like to pressure wash though not a fan of them altogther(unless washing under my chassis), i hose pipe the engine bay then gunk loads on there and use a paint brush to work it in and hose of works well :D
