Recently had a fuel problem fixed on my td5 but now when driving and you put the foot down it seems as though the turbo is drawing back or the engine is being starved of air or fuel. But i dont think it can be the fuel as all fuel lines and filters pressure regulator and all have been checked or replaced. Only a thought guys but could it be the waste gate control valve for the turbo.:doh:
 
The Defender does not have a wastegate control solenoid like the Disco does. Maybe your wastegate is stuck closed or the actuator is not working. Check the small pipe from the turbo outlet to the actuator is not split. Also check the wastgate is working by manually moving it.
