On my cylinder head, I have this sensor, the plug is broken, and cables cut/snapped.

I think it's for the EGR, can anyone confirm?

If so, was thinking of stripping back the cables to tidy up. Also wondering if I should reuse the sensor hole for something else (e.g. an improved temp gauge, in degrees C)

Yes it's the EGR temperature sensor.
I have on on my Defender too and was thinking the same as you, "Can I use it for an improved temperature gauge ?"

It does sit in the water jacket ... so i'm heading towards a 'yes'
Has anyone done this ... ?

If you find a compatible gauge which transforms that sensor's resistance output to the real temperature which might be difficult that's why they sell gauges with the paired sensors in shops
 
I'm not the best with 300tdi engines but i think it must have a coolant elbow somewhere so you can find a spot on it where to drill and tap a proper thread, like i did on the Td5(attached as example) or buy an adaptor and cut the top hose(i dont like this method but works for many) with the proper ID off course: adaptor
