Did you take that photo in the 70s?What is the largest tyre size that would fit a RR classic without rubbing, scrapping on a 16" rim?
Our RR came with 15" rims with BF Goodrich Radial T/A 255/70R/15 which lowered it and also did not have much grip. They also worn very quickly.

Yes. 31.10.50R15 will work however the 15" rims are no longer safe. I also want to have 16" rims because there are more tyre options available. The 285 75 16 is a much taller and wider tyre so unless I try the 285 70 16 for starters and go from there.
Is that a 6 wheel conversion? If so, I have no idea of clearances at the back, you'll have to just try and see and take measurements.

I would say 285/75 is massive and way too big for an otherwise stock RRC. A 235/85 is likely to rub. Hence why the Camel ones ran the narrow 7.00 x 16, as it would sit inside the rear of the rear arch and not foul.
