What do you think of this engine? Looks not so clean to me. Should I worried or do something before to put everything back together?

I don't know the history, but I'd soak up any water with a cloth, remove any surface rust in the bores with some very fine emery, turn the engine over to check where you can't see them out it all back together.
Check the cams while you're at it and make sure all the lobes are nice and tall
 
While you've got the heads off strip & clean the rockers & their shafts ensuring the oilways are clear.
As you clean each item slide it onto a length of dowel to be sure they go back into their original positions when refitting. Keep an eye out for any shims under the pedestals when you undo the bolts.

Almost finished to put everything back together.
