VAG used to have a little wax cyclinder in the coolant in some cars and that used to fail so the choke didn't work. Quick and easy to change.
Choke worked it was just if you floored it when engine cold choke turned off. It was reliant on water temp flowing through a bi metal strip that turned to open as engine warmed up. But if you tried reving engine straight off it went
 
Bloomin' evolution!! Shuuda left well alone, carbs with manual chokes worked fine.. didn't need any sensors etc.. then came auto choke.. which was rubbish so we invented single point fool injection to fix it, because electrickery must be betterer.. went downhill from there 🙄
