Turbotubbs

Hi, wonder if anyone might have an idea what's causing my v8 to overheat - it's got me stumped.
I did have little bubbles in the radiator, so suspected head gasket and had heads skimmed 20thou (the most LR recommend to skim) and fitted composite gaskets. While the heads were off, I checked the liners and they're fine - the engine is in good condition as far as I can see. The bubbles are gone now but the engine still overheats after a mile or so.
I fitted a brand new thermostat, so that's not the problem, although the symptoms would suggest a stuck stat as it just keeps getting hotter as it runs. Having read a post on here I refilled the coolant correctly through the filler jobby on top of the left bank, and can see it flowing round the radiator as it should.
What is worrying me is that the plenum chamber is roasting when I run it - surely if it's drawing cold air through it, it should be cold?
The engine has a high lift cam and a pipercross air filter which I inherited from the previous owner, otherwise standard.
Any suggestions greatly received.

Call me stupid, but I haven't! I saw water flowing round the top and didn't give it much more thought... is the a way of testing it without draining it?
 
I'll check tomorrow (the neighbours wouldn't appreciate me running it now) but I'm pretty sure it's hot all the way through. That does seem like a good theory though, it was running fine then got hot whilst playing in the local quarry... Not been right since
 
Finally got round to checking, and I feel like a bit of a tool - heater is blocked up completely! Managed to find a brand new 'old stock' genuine replacement on flea Bay for £170 delivered, hope that'll do the trick...
