SO, my new question is- if i wire in a button to interrupt the power supply to the AFM (essentially a button that does that same job as me unplugging it), would there be any detrimental effects in the long run?

Yes. Assuming the ECU is actually seeing the airflow meter, by disconnecting it the ecu will go in to limp mode which causes the engine to run very rich (like 6mpg) and this is no good for your engine and you definitely won't get it through an emissions test for MOT.

By the sound of things you either need to get busy with the multimeter or go and get it plugged in. Do a search of the V8 section and you should find the values for the air flow meter and how to check it.

Your alternative is to just throw money at it, get another ECU and another air flow meter or maybe you could borrow and ecu and AFM and test by substitution.
