It's been a long time since I stripped this all down and now, rebuilding is seriously testing my memory (which is very bad btw). So, can anyone enlighten me as to what the oily tissue (below the pulley) is sticking out from and what needs to go in there? Is it anything to do with the wading plug?

Well, there are loads of pulleys above & the copper stuff in the (bit with the rag hanging out) looks like alternator to me.
However....
What is the engine / year / model should help???

Yes its the power steering pump high pressure output port. The pipe goes from the port to the power steering box and has the metal centre section which bolts to the chassis below the radiator shroud.
