It would appear you're right as water going through the motor would be turned mostly (if not completely) to vapour - but I can't get my head around the siphon effect!?
Seen it before and its definitely worth another watch!

water in the motor and you get hydro lock= bent con rods, bent push rods and valves threw pistons, major engine damage and expensive repairs

Small quantities of water can and do pass through engines and come out as vapour - such as when the HG leaks... as you know there is room left when at TDC.
