Presumably you mean a metal undertray?
1. Does it really need to come off?
2. If so it makes you wonder about its service history.
3. Maybe they could of heated the bolts up before rounding them off.
4. Cut them off and throw the tray away, unlikely you will ever go off road.
5. Try some special sockets for rounded off bolts.

Plus 1 what’s been mentioned by @kermit_rr with regards to a suction tube , OP showing a 2011 so one would assume it does
indeed also concerning if a garage can’t get the seized under tray bolts off, agreed ref some heat or even an air chisel

Use a suction unit...we use one, bloody brilliant, just stuff the tube down where the dip stick lives! You do have to wiggle it around a bit to make sure you drain the sump entirely but you end up with a great oil change without ANY mess! Our one cost about £30 and has been worth every penny.

All under trays these day will be plastic I am sure that wouldn't go well with heat.
I would also question the garage as to the right way to do an oil change on your car.
Funny thing is this sucking oil out for a change seems to shock some. When I was 15-16 (that's a while ago) I had a Saturday job on a boat yard and that was the way to change the oil

On cars, then yes. Some Land Rovers have metal ones, probably more correctly called underbody protection.

Only dipstick will be the one behind the wheel then

Mine has no dipstick and no sump plug, just a dedicated suction tube that seems to be baffled so you can't use it as a dipstick tube!!
Bmw drivers didn't seem to have the same rep years ago.. dunno what changed, guess it's when they became more popular and financing became more popular so anyone could buy one

Hi , mine doesn’t have a dipstick. You have to read the oil level on the dashboard. There is a suction pipe coming out of the engine though .I bought one of those vacuums as suggested , I put the pipe down the suction pipe but I couldn’t get any oil to come up. I’ve since sent the vacuum back. It did work though, I tried it on my water butt.
