I've put 7.50 x R16 michelin tubeless tyres on a set of 90 rims on my 2A 88". What tyre pressures should I use? 25 all round by the series book would have been for tubed.. 27F / 38R is what I find advised for Defenders from 1983 onwards. Do they weigh very different? Do I want the rear that high if I'm not much laden?

Doubt if you will run into any problems with 30Psi all round. If you are going to put a couple of engines in the back, maybe put the rears up to 34.

I used to run my Ninety tyres at 30Psi all round, unless I was towing, in which case I pumped the rears up, never had any problems doing that.
 
If you want to get really anal about it then make a wide chalk line across the tread on each tyre and drive dead straight on a perfectly flat even surface (car park for example) after a short distance have a look at the chalk mark, scrubbed off in the middle only = deflate. Scrubbed off evenly across = just right

or save the faff and go for 28-30psi all round
 
I run the Michelin ZXL 7.50 /16 on defender rims (running tubeless). I run 33 PSI all round.
Modern tyres are much more grippy and radials squish quite a bit - especially fronts with engine weight so I find the steering a bit more responsive running harder pressures. Hopefully kinder to the drive shafts too.
