I put too much oil at my last service approx 2L too much and have run for over 1000 miles before realising. Would this have done any damage do i need to take any further steps (apart from draining a bit off ?)

Drain it off, all will be fine if you haven't noticed anything out of the ordinary.

I have a son who used to regularly overfill our Astra van, it burnt it off fairly quickly, so he would top it up again.....

Stopped him eventually when I pointed out that the engine consumption shot up at the increased level he was trying to maintain.

The only thing i noticed was a slight mis fire which has gone since i drained some off.
I did think about leaving it as it does leak a little but saw the message on the drip stick not to over fill as it could cause damage
 
If it gets seriously overfull, the oil will find its way into all sorts of places it shouldn't, and that could be expensive.

where can it go ?

Into the inlet ports via the crankcase breather, if a big enough dollop got through, you'd hydraulically lock a piston. Remote possibility but still possible.

If it got into the exhaust in big enough quantities it could affect the lambda sensors and so on.
