There's no really trick as far as I know. You need a couple of spanners to undo them off the solid copper tubes and same to put the new ones back on.
I guess I'd say be careful not twist the solid copper fittings too much if they wont spin on the copper. Otherwise you may damage the solid tubes themselves.
I'm not sure if there are any tricks of the trade to minimise the brake fluid that will pour out. I'd say just have something underneath so as not to pour it all over the floor.

as buster says, cellophane under the brake fluid cap helps, as does clamping the flexible hose near each copper pipe before undoing

I'd be inclined to swap the copper for steel ones anyway ... copper's so last year
