checking rad is hot all over when vehicles upto temp ,thermostat and cooling system has fresh coolant and in good order would be better and leave head gaskets
With the upcoming work on my rocker cover gaskets I was wandering if it would be wise to replace the head gaskets on my V8 ? The car has covered 116k miles and doesn't overheat, but there is nothing in the history to say otherwise :-/

+1 and as James said make sure the cooling system is up to scratch,its failure to cool properly that buggers head gaskets
I always thought that the head gasket was the weak point, i.e. its quality ?
Nope, just don't let your engine over heat.. even if only once then you could/will see problems down the line, alloy engines don't like it.
Change the coolent/antifreeze every two years or every five with OAT, don't let the outside fins of the rad get clogged up and you should be ok.
And as for a faulty thermostat or hoses I've never change one yet
