Do you need to drain the coolant from the block or just the radiator itself?

Well I drained the lot to be safe. What coolant is best for the 95/96 2.5 TD p38?

Got the thermostat out, how do I test it and see if it's faulty?

Also how do I release tension on the belt to get the water pump out? Cheers

Suspend it in a pan of water on the stove. NOT touching the bottom of the pan. Heat water and watch when it opens. Should open before water boils. Take the tensioner carefully over centre with a bar.
 
Did that, thermostat opens and closes, so can't be that that's causing overheating.

Still puzzled as to how to get the belt off the water pump pulley :(

The tensioner is spring loaded. Put a bar in on top of the tensioner and lever the spring that looks like a small shock absorber upwards to send the tensioner over centre. It should move freely on it pivot. They have been known to seize however.
