If I rebuild my Defender using new chassis, bulkhead etc. where can I get a valuation for insurance purposes?

There a TV show here where a Guy in the UK buys old classics cheap and then rebuilds them to like new. Gets the appraiser to give it a true value then sells them. Really like that show.
