For live log you have to insert a SD card in it go to "inputs fuelling" give it a name as it asks and prompt on the card icon at the bottom, go for a ride then download the card's content in PC and convert to excel . I can help ony if you provide fies like those in the attachment of this post https://www.landyzone.co.uk/land-rover/worried-about-my-engine.341390/page-3#post-4472615 (not the graph, the attached converted CSV)
I've saved a data log, Gave it a good thrashing to get the full range of values, just got to convert the file.

That doesnt men anything cos it's the ECU's output, it has nothing to do with how the wastegate valve or port is behaving

Ah ok, so the live wastegate reading is showing what the ECU is demanding rather than what the wastegate is actually doing?

If it's the one shown in "instrument" mode it's not 100% boost reading but if all the sensors are OK it should match the real boost as it's calculated by the ECU by extracting the AAP(ambient pressure) from MAP(manifold absolute pressure) ... if you dont make a log and no fault codes are stored just watching the instrument mode can be irrelevant, and also the "inputs fuelling" mode is better than Instrument

It was inputs fuelling I was watching, showing live readings from AAP, manifold pressure, egr (zero cos I don't have one) and wastegate modulator. I will make a log, I think I buggered up the first attempt as I turned off ignition before saving it.
