What brand of tyre would have been originally fitted to a white fleet 2003 Defender 110 Station Wagon?

Might depend on who was buying them for their fleet and what they were going to use the Landy for. They might have specified the use of the vehicle which may have affected LR's choice of tyre.

Why? Would you not want to fit tyres with better design and compound technology....

Exactly what I thought. Technology has moved on a fair way since it was made. Doesn't matter how good brakes etc are, there are only ever four points of contact between you and the road. Why scrimp or cut corners ?

I just purchased a set of 7.50 16 from 2005 and they had Michelin tyres from the factory.

I never said i kept the tyres, question was what was fitted in 2003, in 2005 it was michelin on these.

Michelin Latitude were still a standard fitment option at the end of the defender production. I bought a set of take offs. Great on road, adequate for my light off roading
