What is the best way to clean it out? There's loads of wires for a stereo, so I don't want to knacker them :-/ .

Perhaps use some switch cleaner - the stuff you use for cleaning electrical contacts which should not harm any wiring

Get the right stuff, some switch cleaners contain a greasy lubricant as well. Use lots of kitchen towel - anything the cleaner dissolves will run everywhere!
