What is the part called which the brake disk sits in front of and acts as a protective cover for the disc at the end of the axle? Mine is rusted through on my TD5. Where can I get one from and are they easy enough to replace without having to dismantle half the car?

mud or dirt shield

Its called a back plate, useally disc hub and caliper off.
you dont need it though
