Whenever there's a big downpour, the V8 110 won't start, I'm getting all ignition lights and she's turning over fine, but I'm not getting any spark.

I've WD40'd the HT leads, the connection to the coil and greased the wires of the amp and dizzy... and other suggestions?

When my 2.5 had the same symptoms after a real heavy fog I was driving in, it was my coil had shorted out.
 
I've tried plugs, but there's no spark on any of them and the leads are only 2 years old.

I'll have another look at the coil and replace the cap.

As before most likely coil.
Might be just arcing across the outside if it really only happens in the wet.
You could test it by drying the coil alone off with a heat gun (carefully)and see it that sorts it.
Once it's sorted, buy a can of conformable silicone spray and cover everything electrical. You should then be able to hose the engine without a misfire. :)
