Condensation is a problem, i have a sun roof and at this time of year its a pita.As for the wet carpets your going to have to live with it, Defenders let in water from all over. Regarding a power upgrade its about how far do you want to go and spend, had mine remapped by Mike at Dynachip well pleased with extra power and IIRC was about £300. As said before remove EGR and centre exhaust box, and next time a boy racer pulls up next to you rev your engine and see the fear in his eyes when he hears it.
